Most summer gardens are bursting at the seams with zucchini during the summer months. Zucchini is a hearty and easily grown vegetable that produces large quantities. While there are many ways to use up all of that healthy zucchini in side dishes, there are also ways to incorporate them in your main entree.
The popular summer squash comes with a variety of health benefits. Zucchini is a significant source of potassium and vitamin C. A 2017 study in Nutrients Journal stated that “components were safe [and] able to inhibit significantly the H2O2-induced damage and exhibit anti-proliferative and pro-apoptotic activities toward HL60 (human promyelocytic leukemia cells) tumor cells.” The same article also stated that the most beneficial parts of this fruit comes from its bioactive compounds.
Another powerhouse in this recipe is the fresh dill. Dill is naturally high in vitamin C, fiber, and folate. Dill naturally assists in aiding digestion, which is an important factor in proper gut health.
Kefir soda is a refreshing way to get your daily probiotics in a tasty, naturally carbonated beverage. Water kefir is made similarly to milk kefir and kombucha, except instead of fermenting tea or milk you are fermenting sugar water. The water kefir grains metabolize most, if not all, of the sugar out of the beverage through fermentation.
The fermentation process of the kefir grains is where all of those lovely probiotics are created. A 2016 study from Integrative Cancer Therapies Journal found positive results when they used water kefir with rats with breast cancer. The study saw a significant reduction in tumor size and weight along with an increase in helper T cells, and cytotoxic T cells were observed in the group treated with water kefir.
Kefir has become a popular topic in the medical field. In a 2017 study, the Medical Oncology Journal stated that “some of the bioactive compounds of kefir such as polysaccharides and peptides have great potential for inhibition of proliferation and induction of apoptosis in tumor cells.”
Summertime is well known as the prime time for outdoor grilling. It’s a perfect time for families to enjoy a meal together in the fresh air! These grilled stuffed mushrooms are a lovely healthy alternative to what is traditionally found on the grill.
Mushrooms are an inexpensive form of protein for the family. They are also high in vitamin D, which is very important in maintaining calcium levels and phosphorus levels in the blood. Mushrooms also naturally contain selenium, copper, and potassium.
Selenium has caught the attention of scientists and doctors for its possible potential to help prevent cancer. A 2013 study in Nutrient Journal indicated “that dietary Se (selenium) significantly reduced overall cancer mortality and the incidence of prostate, colorectal, lung, and total cancers in male participants during 1983–1993.”
The spinach that fills these mushrooms are high in vitamin A, vitamin C, and vitamin K. They also contain significant amounts of B2 and magnesium. Enjoy these light – yet filling – snacks!
