Video Transcript: RAW RULES: Anti-Aging & The Gonzalez Protocol (Part 2)

So let me explain a little bit how that works. All right we already talked about which foods. So one of the things that Mary Beth wanted me to talk about and so did Charlene was that one diet doesn’t fit all. Okay. But in raw, what’s so necessary is essential fatty acids. That’s the right kind of fats. I’m sorry, essential amino acids, that’s the right kinds of proteins.
That’s what builds the body. The body is regenerated and rejuvenated from the right fats and the right proteins.
You need very little carbs, usually long chain carbs, which all the athletes had backwards because my boyfriend was a hockey player was starting every afternoon eating spaghetti and rice thinking thinking that was going to carry him through his season. I said, “no, no, no. You need long chain carbohydrates. You need salads with fats. You need a steak before a game.” His trainer sent me a nasty letter. He needs bagels with cream cheese in the morning. I was like “it’s your choice. I mean ultimately it’s your choice what you want to put in your body.”
But half the time I’m riding on an airplane, I say “oh what you got there?” “Well, I don’t know, it looks, I don’t know. It smells good but I don’t know what I got.” I’m like, “ew, how do you eat that if you don’t know what you’ve got?” When I started working with Dr. Timothy Brantley who was my first guru who taught me all about raw and the pathology of food, he said to me, “As close to God as you can eat.” The less hands of man touch your food, the better off you are. The less it’s pack- aged, the less it’s cooked, the less it’s chemicalized, the less it’s DDT’d, the better off you are. And that’s the mantra I have kept for the last 26 years doing raw food.
So people ask me, “what about the Pritikin diet, what about the Atkins, what about the Ornish?” The other great thing Dr. Timothy Brantley told me, he said, “Look at the person who’s pushing the diet.” I was looking at a guy who was older than me who looked like he was 22 or 23, had a body of an Adonis, and I was like, “that, that’s what I want to look like.” I don’t want to be old and fat and bloated and no hair and die of a heart attack. I want to look like you and if that’s what you’re telling me is I can eat anything I want as much as I want, I’ll never be hungry and I can use that to keep myself healthy and I can look like you?
For me there was just no turning back, but I’m not just a follower. I want to understand what I’m following and why I’m following it. So the great thing about the raw diet, Mary Beth, raw, raw, raw, deliciously raw, is the raw science behind it. So several things happen to your food when you cook it. Okay. Let’s start with enzymes and the proteins.
So one of the things that happens to food when you cook it is food that normally has its own enzymes in it that when you eat it can help digest itself now has no enzymes. So now you have to make those enzymes and those enzymes come from all of our vitamins and minerals and proteins, all those things that are in our body from the most readily available place is our bodies. So you have to take it from our bodies to make enzymes, to digest food that should have enzymes, but it doesn’t.
Because cooking destroys the enzymes.
The other thing is that vitamins and minerals are hooked together in a way that the body can read it. That’s why we need to have whole foods. Whole foods is incredible because… do you know when they were doing calcium for women and they were saying, well, you can’t just have calcium, you have to have calcium with vitamin D and magnesium because basically the body didn’t recognize calcium without vitamin D and magnesium.That’s the idea behind whole foods.
So when you eat a food it’s got all the vitamins and minerals in the perfect harmony bonded together. And when you eat them the body recognizes them and utilizes them very easily, very simply. Well, when you cook them, those bonds are broken. So the body can’t always recognize even if it’s got what it needs, it doesn’t recognize it has it. The next thing is you change the molecular structure of the food. Molecular structure is important because if you eat a truckload size of fats but the body takes it in and breaks it down and goes, “I don’t recognize this as fats because it’s been cooked so let me take what I recognize.”
And it takes all those fats and it rearranges them and it puts them together and it goes, oh, I have a Volkswagen size of fats here. I can use that. Well, what happens to all those other pieces of that huge truck? It gets stored. Where does it get stored? Right. Depending on where you carry your extra weight, it gets stored. So it’s much better to have cold pressed oils, which your body goes, oh yay. I can utilize this. I’m a Ferrari and this is 92 octane, clean burning.
That’s very important as well. The other thing that happens with food when you cook it is most all alkaline foods become acidic. So let’s just look at this a second because inflammatory disease comes from being inflamed, it comes from an acid environment. By the way, ladies, aging, aging is an inflammatory disease. So if you can—by the way I’m a walking billboard for this because I’m 80. I only present as 50 because I’m eating raw foods because that’s what it does.
It anti-ages you because inflammation stress really can destroy the body, can make you appear older, it can do so many different things to your body. So for me there’s just no question that raw foods is the perfect way to go because it’s clean burning, it rebuilds, it doesn’t make you deplete your body to digest food and it’s the proper PH. Now I am skittish about talking about my health issues but let’s just say that I’ve had health issues my entire life. Allergies since a kid, and all those issues I had when I called Dr. Timothy.
And issues I had after Dr. Timothy, which I’m sure you’ve read about in the press but I don’t really like to talk about because even though this is The Truth About Cancer conference, I try to focus on the positive of how these things can change overall health for everybody whether you are diagnosed with cancer, not diagnosed with cancer, if you’ve got indigestion, if you’ve got stress headaches, migraines. I’m finding that raw food took care of all those issues for me, everything.
And today I don’t have to take a Tums, an Aspirin, a NyQuil to fall asleep, I don’t need Scotch and coffee to wake up and I’m able to throw the Spanx away. No Spanx baby.
You better believe it. So one of my great friends and my second guru when I moved from Los Angeles to New York was Dr. Nicholas Gonzalez and his wife, Mary Beth is here. Mary Beth you’re over here right? Yes. Thank you Dr. Gonzalez. So when I came to New York I went to see Dr. Gonzalez because as I said I was having health issues and I was really arrogant. I mean that’s the most amazing thing about people and myself included is how arrogant we can get. Oh thank you. Is how arrogant we can get about the most ridiculous things.
So I went to Dr. Gonzalez and went, so what’s your program? Enzymes and supplements huh? I don’t need that. I’m healthy right now. And he was like, listen, “You’ve been diagnosed, you had problems. They come, they go, but let me tell you, it’s in there if you had it once, it’s in there. I’m like, whatever, maybe I’ll do some of your diet, maybe I’ll do some of your stuff but I’m not going to do everything. And God bless him, he was totally patient and he became my life saver.
We presented together in Lugano. Dr. Gonzalez had a theory that if you had the right diet for the right body type, if you had the right supplements and your pancreatic enzymes, because he based his work on Dr. Beard and Dr. Kelley. If you had detoxed your body that all of these things could absolutely help you manage your health and any health issues you might have including cancer. So Dr. Gonzalez’s main clientele were cancer patients. These were the three or four, I like to say four because I actually think of pancreatic enzymes as a whole other separate idea here.
So those four things, I went forward and I didn’t mean to, can I go back? No. Okay, well, those four things, the enzymes, the detoxification, the supplements, and the diet, those four things were very important in controlling health. But for me it became about anti-aging. So don’t think I’m so disciplined for no reason at all. I’m disciplined for a real reason because I want to look good at 80. I want to be healthy at 80. I want to be an active 80 year old. So I follow Dr. Gonzalez’s protocol and it’s really served me well.
So his whole thing was based on the sympathetic nervous system and the parasympathetic nervous system. So the sympathetic nervous system really is all about, I call it fight or flight. It’s nervous stress, we breathe fast, our cardiovascular system picks up, our endocrine function, which of course is our adrenal glands picks up. So people who have very strong sympathetic nervous systems and very weak parasympathetic nervous systems are like me, type A crazy idiots, who run around and do all kinds of stuff for 18, 20 hours a day thinking they’re superwomen, giving total disregard to their health.
And it’s not totally their fault. It’s their sympathetic nervous system saying “I am strong” but it’s their parasympathetic nervous system saying “I am weak.” Dr. Gonzalez believed if you had a diet that fed the weaker system that nourished the weaker system, then help the weaker system become more balanced that, in essence, you could have health. One of the things I found about raw food for me was I was so depleted, I was so hungry all the time, I was so negative and angry but I was running on nervous energy because I was shooting three, four films a year working 18 hours a day thinking I was this superwoman only headed for a major collapse.
And I didn’t do myself any justice by believing that. It really took someone slapping me in the face saying listen, you really need to listen to your body because when things start to change, your body talks to you. So if you’re sympathetic dominant you’ll have hyper-mania, high blood pressure, cardiac problems, constipation, colitis, hyperthyroidism, Cushing’s—these are all—cancers with solid tumors like breast, lungs, stomach, colon, pancreas, uterus, ovaries, and prostate.
These are all associated with a sympathetic system that’s dominant. So if you see yourself there, if you have any one of those issues. By supporting your parasympathetic system you can balance that all out and help your issues.

If someone was diagnosed with uterine stromal sarcoma, which nervous system is out of balance since uterine cancer is sympathetic dominant and sarcoma is parasympathetic dominant? What would Dr. Gonzolas say to this question? Thank you kindly.
