We love watercress here at the Bollinger house! This little-known cruciferous vegetable boosts the immune system, can help to fight off cancer, and increases overall health and wellness.
Did you know that just a single cup of watercress provides more than 100% of the recommended daily intake (RDI) of vitamin K? It’s also PACKED with plenty of vitamin C and calcium.
Speaking of vitamin C, I’ve tossed in some delicious clementines for an extra immune boost.
Below is a FRESH, quick, and easy salad that only takes about 5 minutes to prepare. The red onion helps to support the body’s natural ability to detox. Plus, the sulfur in red onions helps to stimulate several anti-inflammatory processes which promote healing by enforcing antioxidant defenses. Sulfur also helps detoxify heavy metals in the blood by flushing toxins from the body.
Also included are a few of my favorite ingredients high in healthy fats: avocado, almonds, and olive oil. Avocados are high in magnesium and high in omega-3 fatty acids. Almonds are high in vitamin E and antioxidants. And according to a 2016 study in Nutrients,
Evidence is available in cell and animal models to support the conclusion that OLE [olive leaf extract] does have beneficial effects and there is anecdotal evidence that olive polyphenols have a protective effect against cancer in humans.
Top off your salad with the apple cider vinegar dressing and you’re ready to feast! Enjoy!
- 2 cups watercress, trimmed
- 1 avocado, sliced thin
- 5 clementines, peeled and chopped
- 1 clementine, whole
- ¼ cup almonds, sliced
- ½ cup red onions, sliced thin
- ⅛ tsp salt
- ⅛ tsp pepper
- 1 tbsp olive oil
- 1 tbsp raw honey
- 1 tsp apple cider vinegar
- In a small bowl whisk together the apple cider vinegar, honey, olive oil, salt, pepper, and the juice of one clementine.
- In a large bowl add the trimmed watercress, clementine slices, sliced avocado, sliced red onions, and almonds.
- Toss the ingredients until everything is well incorporated.
- Drizzle the dressing over salad directly before serving.
You can substitute 1 large grapefruit for the 6 overall clementines needed for this recipe.

This is why I like to read Ty and Charlene. Whenever they suggest, for example, a recipe, you immediately get the recipe when you click on the link, instead of a half hour video touting its benefits, or the life story of someone who had a disease and was helped by what ever they are promoting, and at the end, there seemed always an offer to buy something at a bargain price. I’ve been bitten so often that I have deleted and unsubscribed quite a few of these people who appear initially to be ‘health providers’.
Now Ty and Charlene are different. They immediately get to the point. This time they offered a healthy citrus recipe, and by golly, that is exactly what you get when you click on the link! I plan to stay with them unless their handlers or PR dept decide, in the future, that it would be “profitable” to try to sell something along with their healthy offerings. But so far that has not happened.
